Chiang Mai, Thailand

Yesterday we had an early breakfast because we had plans to take a cooking class in Chiang Mai. 

The hotel we’re staying at has a coffee shop and the barista is very talented!

On the way to the cooking class, we made a stop at a local market for the day’s ingredients. 





This is Aon, our instructor for the day, holding a sulfur egg. It smells as bad as it looks! Aon told us they are used in traditional stir fry dishes. No thanks!









This is ant larvae that is also used in traditional stir fry dishes. The worms had ants crawling through it. That’s a big NO from all of us!

We arrived at Red Chili Cooking School with plans to make coconut soup, pad thai, curry chicken and mango sticky rice for dessert. 







Our instructor, Aon, wanted everyone to do their own chopping and cooking...even Rosalie! She had three extra mothers (Hill, Nat & Mal) looking out for her all day.

Jay mixing curry paste from scratch for the curry chicken dish. It was a lot of work but well worth it. Aon told us that traditionally everything is made from scratch to be used the day of. 












The curry chicken dish was incredible! It has been my favorite dish on the trip so far. The girls enjoyed the pad thai most. 





The mango sticky rice was a big hit too! The rice gets its blue coloring from a dried flower that’s used in cooking and tea. 






After class, we went swimming in the hotel pool. I fell asleep in the room at 3 pm and didn’t wake up until 4 am. The girls all went to sleep at various times and slept through the night, with the exception of Rose, who fell asleep with me at 3 pm and woke at 10 pm. She was awake in my bed the entire night! The time change has been a big adjustment but she’s still smiling!
